Sushi Muffin / Baked Sushi Cup

Saw this trending on social media for a long time & finally decided to try it. Fairly straightforward & even kids can do it easily.

Ingredients

(Makes 12)
250g Cooked Japanese rice
1 tbsp sushi vinegar
250g Salmon
3 sheets Nori/seaweed sheet
1/2 pc Avocado
1/2 pc Cucumber
Seasonings for salmon: 1 tbsp soy sauce, 1 tbsp mayonnaise, 1 tsp paprika, dash of black pepper
Toppings: sriracha, Mayo sriracha, mayonnaise, black & white sesame seeds

Method

Preheat oven to 200 degree Celsius. Prepare a 12-hole muffin pan or 12 individual muffin cups.
Add sushi vinegar to freshly cooked rice, mix well & set aside.
Cut salmon into cubes, season with soy sauce, mayonnaise, paprika & black pepper.
Cut avocado & cucumber into small cubes, set aside.
Cut nori sheet into 4 pieces each.
Take a piece of nori, top with a tbsp of sushi rice. Push the nori sheets with rice into the holes of the muffin pan, and press down slightly.
Top with a tbsp of seasoned salmon.
Bake for 15-18 mins. Remove from oven.
Top each sushi cup with choice of avocado & cucumber, sauces & finally a sprinkle of black & white sesame seeds.
