Crab Meat Fried Rice (Khao Phad Poo)

Crab Meat Fried Rice is a classic Thai dish that is well loved by many and takes just under 30 minutes to prep.

Serve: 4 to 5
Preparation: 15 minutes
Cook: 15 minutes

Ingredients

4 tablespoonsful of sunflower oil
1 tablespoonful of pork lard
50gms of Butter
2 cloves garlic (minced)
4 cups cooked white rice- ideally from the fridge. Cook excess the day before.
1 teaspoonful of salt
1 teaspoon of sugar
6 eggs
1 cup cooked lump crab meat or 1 full tin. Depending on how much prefer.
4 scallions (chopped)
4 Lime wedges (1 thai lime)
Dashi powder (optional)

Method

  1. First, prep all of your ingredients including beating &mixing 2 eggs into the rice . (This is to ensure every grain of rice is covered in egg and it also looks lovely yellow )
  2. Heat the cooking oil about 2 tablespoonful in a wok + 25gms (half of the butter) over medium-high heat. Add the scallions in and fry until its golden brown then add in the garlic and when it’s just about to cook. Add in half portion of the crab meat and fry until the fragrance is realeased. 30 seconds.
  3. Add in rest of oil i(leave 2 tablespoons remaining )ncluding pork lard.
  4. Throw in the cooked rice mixed in eggs, turn up the heat to high.
  5. Stir fry the rice for about 8 to 10mins until all the ingredients are well combined and you hear the charring sound on the wok.
  6. Once it’s about ready, in a separate pan
  7. Heat up the oil and once its hot
  8. Add the remaining oil and crack the eggs. Gently mix over in the pan.
  9. Add in some salt and dashi and when it’s bubbling throw in the rest of the crab clumps.
  10. Once it’s about 3/4 cooked. Take it off the heat.

 

PLATING
Place fried crab meat rice into a rice bowl, compress it and then turn over to pay over a flat serving plate. Place a portion of the fried egg with crab clumps over the rice.
Add 1.5inch choped spring onions as garnish and a quarter of a lime.
