Teochew Steam Pomfret

Teochew “Que” aka Steam is quite a popular and common  dish in every household. Simple, yummy and easily done too. Ingredients are relatively easy to get too

Ingredients

1 fresh pomfret

1 tomato – slice

3 hydrated mushrooms, cut

Tofu – cut into small cube

1 small sour plum

Ginger – 2 slice and shredded

Sze Chuan – cut into thin strips (optional)

 

Sauce

1 tbsp light sauce

1 tbsp shaoxing wine

3-4 tbsp water

Sugar – slightly less than 1/2 tsp

1/2 tsp sesame oil

Method

  1. Rinse Fish thoroughly
  2. Pat dry the fish with paper towel
  3. Sze Chuan (optional) comes in a round pc, so just cut a slice will do, wash and soak for 10 mins then cut into thin strips
  4. Place the tomato at the sides and 2-3 slice ginger on the fish
  5. Arrange the rest of the ingredients over
  6. Prepare a wok with water for steaming the fish ~ once boil – place the fish over, drizzle the sauce over, lastly drizzle 1/2 tsp sesame oil over. Cover and steam it for 10-13 mins

Note

Depends on the weigh of the fish, pomfret I’m having is around 400g.

Once done, sprinkle spring onions and coriander over and serve it hot
