This is a quick and easy stir-fry which takes inspiration from the chinese stir-fry – sweet and sour pork. The sweet and mildly spicy Blue Dragon Mango Chili Sauce really gives the dish an unique, Thai-style flavour. I chose to shallow-fry the chicken instead of deep frying (like what Chinese restaurants do) to make it easier to execute and, not to mention, healthier!

I packed this in a bento for lunch and reheated it in the microwave. I am happy to share that the chicken’s texture and taste is just as it was when freshly cooked, despite being refrigerated overnight! This Mango Chilli Chicken Stir-fry recipe is a keeper!

 

Mango Chilli Prawns

Drawing from the vibrant flavors of Thailand, these Mango Chilli Prawns shine with the addition of Blue Dragon Mango Chilli Sauce. Think of it as a Thai twist on your classic prawn sauté – delicious, tangy, and a breeze to prepare.

Start by seasoning your prawns with salt, pepper, or garlic powder. In a heated pan, melt butter and pan-fry the prawns briefly. Set them aside. In the residual oil, sauté onions and garlic until aromatic. Introduce light soy sauce and the Mango Chilli Sauce, blending them seamlessly. Add a touch of water, then toss in capsicum and mango. Finish by reintroducing the prawns for a final stir. Serve immediately and revel in the Thai-inspired symphony of flavors!

 Much like a Southeast Asian summer roll but with an inviting twist, these Crispy Prawn Pancakes are a mouthwatering treat. Their flavor is reminiscent of classic Asian street food, combining both texture and taste beautifully.

Start by blending prawn paste, sweet corn kernels, carrots, and spring onions in a bowl. Mix in a dash of fish sauce, sugar, and cooking wine for that perfect seasoning. Lay this delicious mixture onto a rice paper sheet and gently place another sheet over it. Pan-fry this duo until both sides boast a golden crispiness. Slice and serve with the tasty Blue Dragon Sweet Chilli Sauce, enhancing every bite.
