太爷鸡 Smoked Chicken

Have you ever thought of smoking your chicken for extra aroma? Tefal multicooker can smoke it too!!

I used whole french chicken to make “太爷鸡” actually it’s pretty easy!

Ingredients

The Sauce
10g sand ginger 沙姜
3g black cardamom 草果
10 cloves 丁香
5g licorice root 甘草
5g dried tangerine peel 陳皮
2 bay leaves 香叶
2 cinnamon stick 桂皮
3 star anises 八角
1/2 tsp sze chuan peppercorn 花椒
20g ginger 姜
3 strands spring onion  青葱
1.5L water

Seasoning (to taste)
1/2 cup light soya sauce
2 tbsp premium dark soya sauce
2 tbsp oyster sauce
2 tsp thick dark sauce for colouring
1 tsp salt
1/8 cup hua tiao wine
50g rock sugar

Smoked Ingredients
60g brown sugar
60g raw rice
30g black tea (I use Lapsang Souchong)

Method

  1. Combine all the sauce ingredients in Tefal multicooker pot. Set cooker to “Sauté/Sear” function, adjust timing to 59 minutes.
  2. Bring the sauce ingredients to boil, add seasoning. Adjust seasoning to your own preferences. Cook for 10 minutes.
  3. Hold the chicken neck and dunk the chicken in and out of the sauce 3 times and finally immerse the whole chicken (breast side down) into the sauce and cook for 15 minutes. Flip the chicken and cook for another 10 minutes. Turn the chicken back to breast side down, let it sit in the sauce for 30 minutes.
  4. Remove chicken and set aside to drain it. Clean down the pot.
  5. Place an aluminum foil at the bottom of the pot, combine smoke ingredients and spread it on the aluminum foil. Put a rack in the centre of the pot followed by the braised chicken on the rack.
  6. Set multi cooker to “DIY” function, adjust temperature to 150°C and timing to 25 minutes. When it’s heated up, close the lid and smoke chicken for 25 minutes. Serve hot!
