Aloe Vera Snow Fungus Dessert Soup

The hot weather is a killer recently! Beat the heat with this nourishing Chinese dessert soup. It requires only a few ingredients – aloe vera, dried longan, snow fungus and red dates. Enjoy it hot or chilled.

Ingredients

1 leaf of aloe vera

1 dried snow fungus

2 to 3 red dates, removed seed

A small knot of pandan leaves (optional)

1 handful of dried longans

Rock sugar to taste

Method

  1. Rehydrate the dried snow fungus by soaking it in water till soft. After rehydrated,  trim off the tough yellow root and tear into bite-sized pieces.
  2. Combine red dates, snow fungus, pandan leaves and one litre water in a pot and bring to boil. Then lower to simmering heat and cook for about 45 mins or till snow fungus turns soft and soup has a silky syrupy texture.
  3. Meanwhile, carefully remove the fibrous outer skin of the aloe vera and cut into cubes.
  4. Remove pandan leaves and add in aloe vera, dried longans and rock sugar. Cook for another 5 to 10 mins.
