Ayam Brand Red Bean Coconut Milk Popsicle

Healthy and yummy two-toned coconut milk popsicle made with Ayam Brand Coconut Milk enhanced with coconut water.

Ingredients

  • 150g Organic Azuki Red Bean
  • 1 Knot Pandan Leaf
  • 1 Orange Peel
  • 3 Cups Water
  • 1 Tbs Monkfruit Sweetener
  • 200ml Ayam Brand Coconut Milk

Method

  1. Soak the azuki beans overnight.
  2. Discard the water.
  3. Wash and scrape the orange peel.
  4. Add pandan leaves to the pot and boil with water for 10 minutes.
  5. Add mandarin peel and monkfruit sweetener and boil for another 5 minutes.
  6. Add the soaked azuki beans and boil for 30 minutes, until beans are softened.
  7. Remove the pandan leaves and mandarin peel.
  8. Blend the red bean soup into a paste.
  9. Let it cool down before pouring into desired popsicle mould.
  10. Give the Ayam Brand Coconut Water a good shake.
  11. Fill up the popsicle mould with the Coconut Milk.
  12. Freeze for at least 6 hours and serve.
