Baked Pork Chops

So far this is our family favourite marinade for meat. No fancy ingredients needed apart from the Iberico frenched rack. However, you can replace the pork with salmon. it taste great as well!

Iberico Frenched Rack (can get from redmart)

1 garlic clove (minced)

1 tsp ginger paste

1/4 cup reduced salt soy sauce (from lee kum kee)

1/4 cup reduced salt oyster sauce (from lee kum kee)

1/4 cup brown sugar or golden syrup

1/4 cup water

1/4 cup oil (avoid coconut or olive oil)

Method

  1. Mix minced garlic, ginger paste, soy sauce, oyster sauce, brown sugar, water and oil.
  2. Add iberico frenched rack and marinate meat for 4 hours.
  3. Line the baking tray with a piece of baking paper.
  4. After 4 hours, remove the meat from the marinade and place it on the baking paper. Set aside the extra marinade. 
  5. Preheat oven to 210C
  6. Bake meat for 50 mins. Refer to the tips below on how to bake it : First 30 mins at 210C, flipping meat over at 15 mins mark. Brush both sides of the meat with the extra marinade. Reduce heat to 190C and continue to bake for another 20 mins. Flipping meat over at 10 mins mark. 7.
  7. While waiting for the meat to be done, you can cook the extra marinade on a stove until thickened. You can use this as a meat dipping sauce for later. 
  8. Once done, remove the meat from the oven. Serve with fries or salad 🙂
