Pan fry the fillet until the skin turned lightly crisp.
Flip to sides and pan fry till cook.
Remove it from pan.
Continue on the same pan.
Add butter, melt it w the oil from cooking.
Add garlic and onions till lightly caramelised.
Add Lemon juice and rosemary leaves. Quick stir in low fire.
Add sugar or honey (yr preference).
Once all well mixed, add the cooked fish and scoop the sauce with a spoon and drizzle over the fish under low fire a 1-2 mins. You may also add in the lemon slice when cooking the sauce (optional)
