Blue Dragon Pad Thai

Pad Thai is one of the quintessential street food in Thailand; very appetizing with its tangy, salty, sweet & fragrant taste.

I learnt how to fry Pad Thai & make the paste from my Thai friends when I was staying in Thailand; so now I can cook it whenever I like. But when I’m feeling lazy to make it from scratch, that’s where Blue Dragon Pad Thai noodle kit comes in handy.

Each kit contains a pack of rice noodles, Pad Thai paste & crushed peanuts; ingredients have no artificial colours or preservatives & suitable for vegans & vegetarians.

For additional ingredients, I have the typical prawns, beancurd, egg, chives & bean sprouts. To adjust/control the overall taste, add the paste bit by bit. If there’s a bit of paste leftover, can use it as dip for the prawns as well.

The portion is quite substantial with added ingredients serving up to 2 pax; and I must say the taste is quite yummy 😋 👍🏻

Ingredients

(Serves 2 pax)

  • 1 packet Blue Dragon Pad Thai noodle kit (rice noodles, pad Thai paste, crushed peanut)
  • 6 pcs prawns, deveined & deshell
  • 1 pc firm beancurd, cut into small cubes
  • 1 egg
  • 30g beansprouts, pluck away tail
  • 3 stalks chives, cut into sections
  • Cooking oil
  • Optional: lime

Method

  1. Bring a pot of water to boil, add pinch of salt. Add rice noodles & cook for 3 mins. Drain & wash with cold water, set aside.
  2. Heat 1 tbsp cooking oil in a frying pan on medium heat.
  3. Add beancurd & prawn, stir fry till cooked. Add pad Thai paste (bit by bit each time) & mix well.
  4. Add egg & scramble. Add a bit of paste & mix well.
  5. Add rice noodles and 1-2 tbsp paste. Mix well.
  6. Add bean sprouts, chives & paste, mix well.
  7. Add crushed peanut, adjust taste with more paste if required.
  8. Plate & serve with sprinkle of crushed peanut and squeeze of lime juice
