Braised Pork Belly

Ingredients

  1. Pork belly x 1 kg
  2. Quail eggs x 15 pcs
  3. Broccoli x few (optional)
  4. Ginger x few slices
  5. Garlic x 5 cloves
  6. Few stalks of spring onion white part
  7. Spices
  8. Green Cardamom x 10pcs
  9. Dried Red Chiles x 10 pcs (soak till soft)
  10. Star Anise x 3
  11. Cloves x few
  12. Bay leaves  x few
  13. Pepper corn x few
  14. 5 spice powder x 1 teaspoon
  15. Seasoning
  16. Black soya sauce x 5 tablespoons
  17. Light soya sauce x 2 tablespoons
  18. Black vinegar x 2 tablespoons
  19. Brown sugar x 2 tablespoons
  20. Cooking wine x 2 tablespoons

Method

    1. Heat up wok, add oil then place in Ginger fry till fragrant
    2. Add Garlic n spring onion while part fry till fragrant
    3. Add in all the spices fry till fragrant
    4. Add in sugar fry till melted
    5. Add all the seasoning stir well
    6. Add in the meat, coat it evenly with the sauce, cover like it cook for 5 to 10 mins.
    7. Check n turn the meat for better coating with the sauce for both sides
    8. Add boiling water till cover all the ingredients, cover let it simmer for at lease 1 hour
    9. Check the meat texture after an hour, the cooking time very much depending on how you want the meat texture like.
    10. When the texture of the meat already to your liking, Add in quail eggs cook for another 10 mins
    11. Add a few drops of sesame oil before serve. Done!
