Braised Pork Ribs with Potatoes

A delicious comfort dish that goes very well with plain rice.

Ingredients

300g pork ribs

2 medium-sized potatoes, cut into chunks

1/2 stick carrot, cut into chunks

1 onion, cut into chunks

Few slices of ginger

2 cloves garlic, smashed

Marinate for pork ribs:

1 tbsp soya sauce, 1/2 tsp salt, 1 tbsp cooking wine, 1 tbsp beaten egg, 2 tbsp corn starch

Seasoning:

1 tbsp oyster sauce, 2 tsp soy bean paste, cooking wine, 1 tsp sugar

Method

  1. Marinate pork ribs for a few hours.
  2. Deep fry potatoes to a light golden brown. Briefly deep fry pork ribs for about a minute. Set aside.
  3. Saute ginger/onion/garlic, oyster sauce and soy bean paste till fragrant. Add in carrot, pork ribs and sugar. Stir well and drizzle in some cooking wine.
  4. Pour in hot water, sufficient to cover ingredients, plus another 1 inch. Cover, bring to boil and simmer for 10 minutes.
  5. Add in potatoes and continue to cook till potatoes are soft and gravy thicken.
