Braised Pork Trotter with Spicy Sauce

Tefal Smart Multicooker Recipe

Sometimes I would crave for pork trotter, would you? Usually it takes very long for the pork trotter to be cooked till it’s soft. Using Tefal multicooker, you only need 30 minutes to cook it! “香辣燜猪脚” if you don’t take trotters, you may change it to chicken feet, pork belly or chicken wings… but cooking function and time may vary.

Ingredients

1 whole pork trotter, chopped
5 sliced ginger
1 clove garlic, bruised or halved
3 shallots, bruised
1 bay leaf
1 cinnamon stick
1 star anise
1 tsp SzeChuan peppercorn
6 dried chilies, soaked
1/2 cup peanuts, soak and wash
2 stalks spring onion, cut into sections
1 stalk coriander for garnishing
2 cups of water

Seasoning (to taste)
2 tbsp chili bean paste (dou ban jiang)
1 tbsp fermented black bean (豆豉), chopped
1 tbsp grounded chilli (optional)
3 tbsp oyster sauce
1 tbsp light soya sauce
1/2 tbsp dark soya sauce
2 tsp brown sugar
2 tbsp Shaoxing wine
Pinch of pepper

Method

  1. Fill up half pot of Tefal multicooker with water, set cooker to Sauté/Sear mode for 50 minutes. Blanch pork trotters for 5-10 minutes. Remove pork trotter from the pot and rinse to remove impurities, strain and set aside. Clean down the pot.
  2. In the same pot, heat up 1 tbsp of cooking oil. Sauté ginger, shallots and garlic for 2-3 minutes or until garlic is golden brown.
  3. Add spring onion, bay leaf, cinnamon stick, star anise, peppercorn, dried chili followed by fermented black bean and grounded chili. Cook until fragrant.
  4. Combined blanched pork trotter and peanuts into the pot, add chilli bean paste. Stir to combine.
  5. Pour 2 cups of water and mix the rest of the seasoning. Bring it to boil.
  6. Change the cooker mode to “Beef”, cook by default pressure level 60 for 30 minutes, press “add ingredients” button. Close and lock the lid, press start to cook. When the cooker beeps at the end of 10 minutes, adjust the seasoning to your preferences. Continue to cook till done.
  7. Dish up, garnish with coriander and serve hot!
