Breakfast Surprise Muffin 🍳 早餐惊喜玛芬

Make these and watch your kids squeal in surprise when they bite into the muffin!

Actually not just the kids, I would squeal too! 🤭

Ingredients

  • 225g Plain flour
  • 5g Baking powder
  • 1g Baking soda
  • 2g Salt
  • 100g Cooked Bacon , chopped
  • 30g Chives , chopped
  • 165g Milk
  • 2g White vinegar
  • 165g Sour cream
  • 45g Bacon fat
  • 1 Egg
  • 6 Eggs, medium-boiled
  • 30g cheddar cheese , shredded

Method

Preheat to 220C

  1. Whisk dry ingredients together.
  2. Whisk wet ingredients together.
  3. Pour wet Ingredients into the dry ingredients until flour is almost incorporated.
  4. Grease muffin tin holes. Pipe batter at bottom of holes.
  5. Coat cooked eggs with flour and nestled in the muffin holes. Pipe batter around the egg and spiral up. Top with shredded cheese.
  6. Bake 10-15 mins till golden brown. Serve warm.
