Burrata with Heirloom Tomatoes Salad

An easy to prepare and refreshing salad. Good for sharing as a side or as a hearty meal with some crusty bread.

Ingredients

Burrata

Salad green

1 cup of mini heirloom tomatoes, halves

1/2 onion, finely chopped

1 garlic, minced

Bunch of parsley, finely chopped

Method

  1. Mix together tomatoes, onion, garlic, parsley and season well with salt, pepper, olive oil and balsamic vinegar to taste. Keep chill in fridge.
  2. Place burrata on a bed of salad leaves.
  3. Pour seasoned tomatoes over salad. Drizzle over EVOO and served with toasted bread.
