Chicken Paella

Delicious one-pan dinner for the family. Perfect on a busy weekday!

Ingredients

  • 1 heaped cup paella rice
  • 2 cups water/stock
  • 2 chicken legs (cut into four servings, marinate with salt and pepper)
  • 2 sausages (preferably smoked or chorizo)
  • 1 tomato, chopped
  • 1/2 red bell pepper, chopped
  • Handful of kale* (gently massage with pinch of salt and olive oil. Set aside.)
  • Chopped onion, minced garlic

* Instead of kale, you can substitute it with other vegetables such as broccoli, bok choy, asparagus etc

Method

1) Add sufficient oil in pan to sear the chicken and sausages till golden brown. Set aside.

2) With remaining oil in pan, stir fry onion, garlic, bell pepper and tomato.

3)Add in the rice and mix well. Cook the rice gently over medium low heat for a few minutes, before adding in the water/stock (If using water, season with salt).

4) Add the seared chicken pieces and sausages on the rice. Cook uncovered for a few minutes over low heat, then cover with a lid to finish cooking. Check and add a little more water (if necessary) to adjust the texture of rice to your liking.

5) Add the kale and grated parmesan. Turn off the heat and keep the lid on for a few minutes before serving.
