Claypot Chicken Rice

Ingredients

500g chicken leg cube
a small piece of salted fish
1 cup rice with 1.2 cup water
5 dried mushroom
2 sausages soak in hot water and slice thinly
3 stalks Xiao Bai Cai

Topping sauce

1 tablespoon Oyster sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
sprinkles with chopped green onions and fried shallots

Method

  1. Marinate chicken cube for at least 15mins with oyster sauce, dark sauce, sesame oil, ginger.
  2. Fry salted fish bits until golden
  3. Cook rice and cover lids and let it simmer for 15mins
  4. Add marinated chicken, fried salted fish, mushroom and sausage on top of rice
  5. Cover and simmer for another 15 minutes
  6. Add xiao bai cai
  7. Drizzle with topping sauce
