Coconut Pandan Pudding

A foolproof dessert recipe that is great for gathering/party. It’s easy to prepare, looks pretty, and taste delicious.

Ingredients

Ingredients:

First Layer:

1 package of white agar-agar

1 package (330ml) Ayam Brand Coconut Milk enhanced with Coconut Water

100 gr sugar

1 tsp pandan paste

1/2 tsp salt

550ml water

2 eggs, beaten

Second Layer:

1 package of white agar-agar

100gr sugar

1/2 tsp salt

600ml fresh milk

Method

First layer:

1. Add all the ingredients into a saucepan (except 1 beaten egg)

2. Place the saucepan over medium heat, and whisk the ingredients till all incorporated.

3. Add 1 beaten egg and slowly whisk to mix until the ‘moss’ appears

4. Let it boil for another 2-3 minutes

5. Remove it from heat and let it cool down for a few minutes then pour it to a mould

Second Layer:

1. Whisk all ingredients together over medium heat

2. Let it boil then remove it from heat

Assembly:

When the first layer starts to form a thin film, ladle the 2nd later mixture on top of first layer, spoonful by spoonful.

Let it sit at room temperature for about 1 hour before placing it into the fridge. Leave it for at least 2 hours in the fridge before enjoying it.
