Cream of Mushroom

Creamy yet decadent, this cream of mushroom recipe can be made by anyone. It has the earthy tone of mushrooms pulled together with a good amount of heavy cream. Kids’ friendly and will be the ideal soup for any occassion!

Ingredients

500g brown mushrooms, cleaned and sliced
1 medium onion, chopped finely
2 cloves garlic, minced
1 bay leaf
30g butter
2 tbsp plain flour
500ml chicken stock or water
300ml cooking cream
1 tbsp olive oil
Salt (to taste)
Pinch of black pepper
Truffle oil for garnishing (optional)
Parsley flakes for garnishing (optiona

Method

  1. In a medium pot, heat up 1 tbsp of olive oil. Sauté onion, sprinkle a pinch of salt in order to soften the onion faster. Cook until onion is translucent.
  2. Add garlic and bay leaf, cook until fragrant. Combine mushrooms, fry for 2-3 minutes or until it’s soften.
  3. Add 2 tbsp of plain flour and mix well. Pour 500ml of chicken stock or water into the pot, bring it to just a boil. Turn off the heat and let it cool down.
  4. Put mushroom soup into a blender and blend until smooth.
  5. Put the soup back into the pot, season with salt and pepper. Add 300ml of cooking cream and bring it to simmer.
  6.  To serve, scoop mushroom soup into a small bowl, drizzle 1 tsp of truffle oil and 1 tsp of cooking cream on top, garnish with some fresh or dried parsley.
