Crispy Honey Soy Lion’s Mane

Mushroom Buddies, nestled within the E4PID Co-op, is a compassionate collective dedicated to empowering youths with intellectual disabilities for a brighter tomorrow.

Each day begins afresh with a commitment to hygiene, ensuring the safety of their produce and consumers. With tender care, they harvest and pack their mushrooms, ready to grace dining tables and farmer’s markets, inviting all to share in their wholesome bounty and vibrant spirit.

Ingredients

50g Fresh Lion’s Mane (Mushroom Buddies)

1 tablespoon of Rice Flour

1 tablespoon of Self Raising Flour

Oil for deep frying

 

Sauce Mixture:

1 tablespoon of Oyster or Vegetarian Oyster Sauce

1/2 cup of Soya Sauce

1/4 cup of Water

2 tablespoons of Honey

White pepper

Method

  1. Soak the fresh lion’s mane with salt water for 10 mins.
  2. Rinse until water runs clear.
  3. Squeeze the lion’s mane until dry.
  4. Tear lion’s mane into small bite size.
  5. Dredge lion’s mane with rice flour and self raising flour.
  6. Remove excess flour before deep frying in medium heat.
  7. Drain oil on paper towel.
  8. Bring the sauce mixture to boil before adding fried lion’s mane.
  9. Stir well until completely coated with sauce. Serve immediately.
