500g chicken curry paste
800g chopped chicken
3 potatoes peeled skin cut in half/quarters
200 ml coconut milk
1.25 litre of water
Instructions
1. Season chopped chicken with half the curry paste for at least 30 mins
2. Stir-fry the seasoned chicken, add potatoes and water
3. Turn to low heat to simmer for at least 20 mins
4. Once the chicken is cooked/ potatoes are soft, add coconut milk and stir till it boiled
5. Served hot with rice.
