Dry Laksa

One Pot Dry Laksa

Ingredients

Dry Laksa Recipe :
For 7-8 pax
1kg Thick bee Hoon (blanched w hot water)
2 -3 cloves of minced garlic
2 tsp dry shrimp (optional)
Prawns
Beans sprout
1 small fish cake – sliced
5-6 tau pok – sliced
180 – 200 ml coconut milk
100ml Water (set aside)
Fish sauce (optional)
4 hard boil eggs
1 pkt Laksa paste (any brand)

Method

1)In a pan, add 2 tbsp of oil followed by minced garlic over medium fire
2)Add minced dry shrimp (optional) fry till fragrant. Add in sliced fish cake and tau pok. Add 1/2 & slightly more of the pkt of Laksa paste and stir well
3)Add coconut milk slowly and simmer over Low fire.. slow stir (make sure don’t burn)
Add prawn(optional)
4)when prawns r almost cook, add in the bee Hoon and toss well. Add water bit by bit if not gets too wet follow by a drizzle bits of fish sauce by the side
5)Add beans spout, gv it a quick stir and off fire and cover the pan.. let it self cook in the pan for a while .. garnish w boiled eggs and laksa leaves and is ready to serve 😉

** I use slightly more than half a pkt of the paste 1st (I used Hai’s brand).. u can try the spiciness after point 4 .. if u feel not enuff, u can add like another tbsp or more of the paste and coconut accordingly.
