Easy Homemade Pad Thai

I always enjoy a good plate of Pad Thai! But sadly, a lot of Pad Thai that I tried were overly sweet and oily, instead of a good balance of sweet-savoury-sourness.

With the Blue Dragon Pad Thai Noodle Kit, it’s so easy to cook it at home. You have the rice noodles, pad Thai sauce and crushed peanuts all within the kit!  How convenient is that! And homemade means I can add more vegetables to make it a hearty and healthier meal.

Ingredients

­Yields 2 servings

  • 1 packet Blue Dragon Pad Thai Noodle Kit*
  • 6 medium-sized prawns
  • 1 firm tofu, cut into strips and briefly pan-fried
  • 2 eggs
  • 2 good handfuls of beansprouts
  • 4 stalks garlic chives, cut into 4cm long
  • 1 tbsp chopped garlic
  • 1 tbsp chopped shallots
  • 2 tbsp sweet preserved radish

* Blue Dragon Pad Thai Noodle Kit contains rice noodles, pad Thai paste, crushed peanut

Method

  1. Fry the prawns and set aside.
  2. Use the remaining oil in the wok to saute the minced garlic, shallots and preserved radish till fragrant.
  3. Add in the pad thai noodles (pre-boiled for 5 minutes, then rinsed with cold water) and stir fry to loosen it.
  4. Add pad thai sauce to taste, a little water and continue to stir fry till fragrant (note: I didn’t use up all the pad thai sauce).
  5. Push the noodles to one side, add a little more oil and crack in the eggs. Lightly scrambled the eggs and stir with the noodles.
  6. Add the prawns and tofu. Add a light splash of Thai fish sauce for that umami flavour (optional).
  7. Add garlic chives, beansprouts and half the crushed peanuts. Turn off the heat and toss the vegetables to mix well.
  8. Plate and garnish with remaining crushed peanut.
