Gemstone Jelly Cups

If you’re looking to make an effortlessly elegant jelly dessert that is not only refreshing, but also bound to capture eyes and hearts at parties, here’s a simple recipe for you to try.

Also dubbed ‘Hydrangea Jelly’ on Japanese pages, these beautiful gemstone jelly cups are easy to make and takes only around 30min of active prep time.

Ingredients

  • 330ml Ayam Brand Premium Coconut Milk
  • Gelatin Powder 20g
  • Sugar
  • Pandan Leaves
  • Purple Food Coloring
  • Blue Food Coloring

Method

  1. Add 5g gelatin powder, pandan leaves, few drops of purple food coloring and 2 tbsp sugar to 2cups of water
  2. Bring to a boil while stirring constantly, before pouring into a glass/ceramic receptacle. Set aside to cool.
  3. Repeat steps 1 & 2 with blue coloring.
  4. Add 10g gelatin powder, pandan leaves, 300ml of coconut milk and 100g of sugar into pot. Bring to boil while stirring constantly.
  5. Pour coconut milk gelatin mixture into serving glasses and leave to chill and harden.
  6. Cut up blue and purple jelly into tiny cubes and spoon them onto the coconut milk jelly. Leave in refrigerator to chill.
  7. Garnish with mint leaves and serve.
