Braised Fish in Ginger & Spring Onion


Ingredients

Fish – any kind to your own preference. (yellow-tail snapper, pomfret, red snapper etc etc..)
5 stalks spring onion + more for garnishing, cut into sections
ginger, shredded
3 tbsp cooking oil

For the Seasonings:
1 cup of water (you can add more if you want more sauce)
1½ light soya sauce
1½ dark soya sauce
2 tbsp shaoxing wine
Pinch of salt
1 tsp sugar

For Garnishing:
Spring onions
Chillies 

Method

1) Make a few slits on both sides of the fish.

 

2) Heat up 3 tbsp of cooking oil in a pan and pan fried the fish on both sides until lightly browned.

 

3) removed fish from pan and set aside.

 

4) Add in the shredded ginger and fried till slightly browned, add in spring onion and contiune stir- fry.

 

5) Add in the water, all the rest of the seasonings ingredients and the fried fish on medium heat. Turn the fish over occasionally to allow the sauce to be coated evenly.

 

6) When the sauce is reduced and thickened, Turn off the heat.

 

7) Garnish with spring onion and chilli and serve immediately.
