Hearty Kimchi Stew with Dumplings

A piping hot stew always tastes extra comforting on a rainy day. I added frozen dumplings, the starch in the dumpling skin helps to thicken up the stew as it cooks.

Ingredients

  • 5 slices shabu shabu pork belly
  • 1/2 cup of chopped kimchi
  • 3 big frozen dumplings
  • 1 cup vegetables (sliced onion, zucchini, mushrooms etc)
  • 1 egg
  • Chopped spring onion (garnish)

Seasoning:

  • 1 tbsp Korean hot pepper powder
  • 3 tbsp kimchi juice
  • 2 tbsp fish sauce

Method

  1. Saute the pork belly slices in a pot. Add in kimchi to stir fry with the rendered pork fats. Add the pepper powder and stir well. Add the kimchi juice, hot water or broth and bring to boil.
  2. Add the vegetables and dumplings. Continue to simmer for another 8 to 10 mins till dumplings are cooked. Crack in one egg and garnish with chopped spring onion.
