Jade Gula Melaka Agar Agar

Ingredients

Top Layer
500ml water
170gm sugar
250ml water
12.5gm agar-agar powder
250ml coconut milk
25gm corn starch
500gm store bought cendol
Pinch of salt

Brown Layer
180gm gula Melaka
500ml water
250ml water
12.5gm Tbsp agar-agar powder 250ml Coconut Milk
Pinch of salt

Method

Top Layer

  1. Mix agar powder with 250ml water, set aside.
  2. Add cornstarch, salt and coconut milk together – set aside.
  3. Put 500ml water and sugar to boil, once boil, pour into agar mixture.
  4. Bring to boil again, lower heat and pour in cornstarch mixture, stirring all the while.
  5. Remove from heat and put in drained cendol.
  6. Pour ontop of the gula melaka layer.

 

Brown Layer

  1. Bring 500ml water with palm sugar(gula melaka) to boil and simmer until dissolved.
  2. Add in agar powder with 250ml water and pour into the pot. Bring to a boil again.
  3. Lower fire and pour in coconut milk stirring all the while. When there are small bubbles on the side of the pot, remove immediately pot from fire.
  4. Pour into mould and let it set and cool down.
