Kuih Kapit/ Love Letter Biscuit by Kim Underhill

Kuih kapit or also known as love letter biscuit commonly enjoyed during Lunar New Year

Ingredients

400ml Fresh Coconut Milk (First squeeze only)

320g Fine Sugar

250g Rice Flour

50g Tapioca Flour

10 Large Eggs

1 tsp Salt

1 tsp Cooking Oil (For greasing moulds before use)

Method

  1. Mix sugar and eggs until sugar dissolves completely
  2. Incorporate dry ingredients
  3. Allow the batter to sit for 4 hours or overnight
  4. Grease your moulds with cooking oil before using
  5. Cook over charcoal stove
  6. Cool on rack before storing in airtight containers
