Lemonade Scone (shortcut)

A shortcut scone recipe that only requires a few ingredients! Perfect for when u want some scones fast!

Ingredients

Scones 💛 司康饼

  • 330g Self-raising flour, sifted, plus extra for dusting
  • 50g Caster sugar
  • Pinch of salt
  • 150g Thickened cream
  • 150g Lemonade (I used Sprite)
  • Milk for brushing tops

Method

Preheat oven to 200C

  1. Mix flour, salt and sugar in a large bowl. Add thickened cream and lemonade, and stir together till it forms a rough dough.
  2. Tip onto a lightly floured countertop. Knead a few times till combined.
  3. Roll or pat dough into ~1” thick. Use a round cutter (I used a 6cm and a 3.5cm) to cut out rounds. Gently reroll scraps and cut out as many as u can.
  4. Transfer to a lined baking tray. Lightly brush the tops with milk. Bake 15-20 mins till lightly browned. Serve with clotted cream, butter, jams, lemon curd or anything u desire. ❤️
