Luncheon Meat Buns

Ingredients

125g ice water
3g yeast
40g sugar
25g beaten egg
210g bread flour
40g cake flour
8g milk powder
25g unsalted butter ( room temp)
3g salt
9 slices of luncheon meat

Method

  • Mix all ingredients except butter using a standing mixer.
  • Add butter once smooth dough is formed.
  • Knead till window pane stage formed.
  • Round dough and place in a covered bowl to proof for approx 1hr.
  • Degas dough and divide into 9 portions.
  • Round into individual balls and rest for 15min covered.
  • Shape and wrap luncheon meat.
  • Proof for another 50min.
  • Egg wash and sprinkle parmesan cheese powder and dried parsley flakes.
  • bake at 180°c for approx 15min depending on individual oven m
