Mini Apple Puff Pastry Pies

The easiest apple pies to make at home! Using just a handful of ingredients, these are so simple and quick to make. Can make ahead, and keep frozen for whenever they are needed.

Flaky, tart, just sweet enough with a touch of salt. Delicious on their own, heavenly with a scoop of ice cream.

Ingredients

(Makes 10 mini apple pies)

  • 150g Green apple, skinned, cored, diced
  • 25g White sugar
  • 25g Salted caramel, storebought or homemade
  • 1g Ground cinnamon (more or less to preference)
  • 10g Corn flour
  • 5x45g Puff pastry, rolled and cut into 10 rectangles
  • 1 egg, beaten
  • Optional: suga to sprinkle

Method

  1. Prep the green apples and mix evenly with white sugar, salted caramel, ground cinnamon and corn flour. Can omit salted caramel and replace with a pinch of salt if unavailable.
  2. Roll out puff pastries and cut into rectangles. Place ~1.5 tsp of apple mixture on the lower half of the pastry, egg wash the outer edges, then being the top half over. Press down gently to seal the edges and crimp with a fork. Make a cross on top as vent.
  3. Egg wash the pastry and sprinkle with a little sugar.
  4. Bake at 190C for 20 mins or until golden brown. Serve warm.
