Mini Coconut Chicken Pies

I love using tart shells creating different bites using basic pantry ingredients. TRY and indulge in this Mini Coconut Chicken Pies! SO GOOD! They’re ideal for gathering and parties 🥳

Ingredients

(Yield 8)

  • 8 Frozen Tart Shells
  • 50g Onion (diced)
  • 100g Potato (diced)
  • 50g Carrot (diced)
  • 120g Chicken Fillet (diced)
  • 1 Tbsp Plain Flour
  • 2 Tbsp Panko
  • 1.5 Tbsp EVOO
  • 1 Tsp Parsley Flakes
  • Sea Salt & Black Pepper (to taste)
  • 120ml Coconut Milk

Method

  1. Air fry tart shells at preheated 200° for 8 minutes.
  2. In a heated pan, add EVOO, onion, potato, carrot and chicken, stir-fry till cooked.
  3. Lightly season with salt, black pepper and parsley flakes.
  4. Add plain flour to mix well and coconut milk.
  5. Fill the tart shells with coconut chicken fillings and top with some panko.
  6. Air fry at 180° for another 5-6 minutes.
