Moist Chocolate Cuppies

Ingredients

  • 80g unsalted butter (room temp)
  • 65g sugar
  • 1g salt
  • 20g honey
  • 65g egg (room temp)
  • 95g cake flour
  • 4g baking powder
  • 25g cocoa powder
  • 55g milk (room temp)
  • 65g chocolate chip

Method

  1. Mix together flour, baking powder and cocoa powder.
  2. Sieve twice and set aside.
  3. Use a hand whisk and mix softened butter, sugar, honey and salt. Mix till creamy pale yellow texture.
  4. Add in beaten egg in 3 batches. Mix well every single batch before adding the the next batch.
  5. Sieve in the flour mixture and mix gently.
  6. When you can still see a bit of flour in the bowl, add milk. Mix well gently.
  7. Add chocolate chips and mix evenly.
  8. Pour mixture into a piping bag and fill the cupcake mould 70% full.
  9. Top will more chocolate chips and bake in a preheated oven 180°c for 25min.
