Pull Apart Buns

Ingredients

Recipe makes (12 x 40g)

120-130g ice water
(I use 125g)
3g yeast
40g sugar
25g beaten egg
210g bread flour
40g cake flour
8g milk powder
25g unsalted butter ( room temp)
3g salt
Pearl sugar for sprinkle

Method

  1. Add all ingredients except butter in a stand mixer and knead.
  2. Once smooth dough formed add butter and continue to knead till elastic dough formed.
  3. Round dough into a ball and place in a bowl and proof in a warm place for 1hr.
  4. Degass and divide dough into 12.
  5. Round them into balls and rest for 15min covered.
  6. Shape and place in tin. Egg wash and sprinkle with pearl sugar.
  7. Bake in a preheated oven at 180°c for 15min depending on individual ove
