Pulled Chicken in Hot Chilli Fried Rice with Crispy Chicken Floss Toppings

The newly launched Ayam Brand Pulled Chicken in Mayonnaise and Hot Chili are available at all major Fairprice supermarkets. The yellow and black color theme packaging is eye-catching. Easy to open and each can is packed with pulled chicken. Taste good without being overly salty. Hotness level is just nice for me, but the son added white pepper for a more fiery kick.
Oh yes, I air fried a spoonful of the pulled chicken to make into crispy floss toppings for my fried rice. It is amazingly addictive!

Ingredients

  1. 1 can Ayam Brand Pulled Chicken in Hot Chilli
  2. 2 cups of overnight cooked rice
  3. 2 eggs, lightly beaten
  4. ¼ cup corn kernels
  5. ¼ cup chopped carrots
  6. ¼ cup chopped red onions
  7. ¼ cup chopped spring onions, white section
  8. 3 tablespoons cooking oil
  9. ½ – 1 teaspoon salt (optional)
  10. White pepper (optional)
  11. Chopped spring onions, green section for garnishing

Method

  1. Open a can of pulled chicken, remove the chilli, and set aside later use. Spoon out 1 heaped tablespoon, squeeze out some juice and spread thinly over a plate for air frying.\
  2. Air fry at 140 degree celsius for 30 minutes or until it becomes crispy floss. Remove and set aside for later use.
  3. Add 1 tbsp of oil to the wok to sauté carrots, onions, white section of spring onion and corn kernels. Remove and set aside for later use.
  4. Add 2 tbsp of oil to the wok and once hot, add cooked rice and give it a good mix.
  5. Add eggs and mix well to coat every grain of rice.
  6. Add balance pulled chicken and cooked vegetables when the egg is slightly cooked. Mixed well.
  7. Taste, add salt and white pepper (if used) and mix well.
  8. Off heat, plate and garnish with spring onions, crispy floss, and chilli. Serve hot and enjoy!
