Pumpkin Shaped Buns

Ingredients

220gm Bread Flour
40gm Plain Flour
1 Egg Yolk
28gm Raw Sugar
145gm Fresh Milk
1 Egg Yolk
5gm Instant Yeast
1/2tsp Salt
25gm Butter

Method

In a mixing bowl, add all ingredients except salt and butter.
With a dough hook, knead in stand mixer  for a 5 minutes until the dough comes together.
Add in salt and knead for another few minutes then add in butter.
Continue to knead until the dough is elastic or window pane.

Rest the dough for 30 minutes. Divide dough into 8 pieces and roll them round. Cover with a clean cloth and rest another 15 min.

Meanwhile, cut kitchen string into  8-10inch strands. Place strings in a bowl and toss with flour.

Place 4 pieces of string on the work surface, crisscross strings over a center point into a star formation.
Place a dough ball, smooth side-down, onto the center point. Firmly tie each string into a knot over the center of the roll. Snip off excess string using scissors.

Place tied roll onto a prepared baking sheet, knot side-down.
Let rolls rise for about 40 minutes, cover with a clean cloth.

Preheat oven at 170deg.
Egg wash rolls with beaten egg yolk.
Bake the rolls in the oven until golden brown for about 20 to 25mins.

Remove from the oven and let cool, about 30 minutes.
Cut strings off of each roll at the tops and peel down carefully and slowly to remove.
