Rice cooker pork rib mushroom rice

One pot wonder using rice cooker

Ingredients

200g Baby ribs (chopped into smaller pieces)

1.5 cups Rice

Chinese mushrooms (soaked and cut into strips)

Garlic (chopped)

Corn kennels

Spring onions


Marinates

Salt

Pepper

Pork powder

Light soya sauce

Dark soya sauce

Oyster sauce

Sugar

Sesame Oil

Method

  1. Marinate the baby ribs with the marinate ingredients for 30min-1hr.
    Heat pan with some oil. Add mushrooms and stir fry till caramelised. Remove and set aside.
  2. Add more oil (high heat) and brown the marinated baby ribs. Once browned, lower heat and stir fry garlic till fragrant.
  3. Add water and simmer for approximately 10min or until water reduced.
  4. Wash rice as normal and place in in rice cooker (I scooped out 2 Tbsp of water so rice won’t be too soft when cooked).
  5. Add in the baby ribs with the gravy, mushrooms and corn kennels.
  6. Drizzle some dark soya sauce. Cook rice as per your rice cooker.
  7. Once done, add in spring onions and close back the lid and wait for 15min before serving.
