Steamed Lotus Leaf Buns

Lotus leaf buns are readily available at most wet markets and supermarkets. But making them at home is not difficult at all, plus these homemade buns are softer and fluffier than store-bought buns! And you don’t even need a mixer, if you are making a small batch like what I did.  Perfect to go with braised pork belly, steamed otah otah or any savoury fillings.

Ingredients

  • 200g plain flour
  • 100g water
  • 20g sugar
  • 1/2 tsp instant yeast
  • 1/2 tsp double acting baking powder
  • 1/2 tsp salt
  • 2 tbsp cooking oil + extra oil ( brushing)

Method

  1. Mix well all the ingredients and knead to a smooth dough.
  2. Cover and rest the dough for 20 minutes, then divide into 8 equal portions, each weighing around 42g.
  3. Knead and round each dough, rest for 10 ~ 15 minutes.
  4. Using a rolling pin, roll out each dough into a flat round disc. Lightly brush the surface with oil and fold into half. Place all the buns in a steamer.  Proof the buns for about 20 minutes.
  5. Cover the steamer lid with cloth (to prevent water droplets from dripping onto the buns) and steam over medium-high heat for about 7 minutes.

* Note: DO NOT LIFT UP the cover immediately after steaming. Let it sit for 1 to 2 minutes before removing the lid.
