Steamed Yam Cake

Do you like to add a lot of yam in your homemade orh kueh? I don’t 😅

Not too much, but must be able to taste the yam cubes in each bite. And it will be boring if just yam, so you need dried shrimps, mushrooms, fried shallots to add variety, flavour and texture to the yam cake.

Served as it is, pan fried or stir fried with some beansprouts, chives and egg for a yummy breakfast.

Ingredients

Makes 8 to 9 servings

  • 300g rice flour
  • 1 tbsp wheat starch
  • 1 tbsp potato starch
  • 1 tsp salt
  • 900ml water
  • 200g peeled yam
  • 2 to 3 Chinese mushrooms
  • 1 Chinese sausage
  • 2 tbsp dried shrimps
  • 4 to 5 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 tsp five spice powder

Method

Preparation:

* Chinese mushrooms: Rinse, soak in water till soft, diced.

* Sausage: Rinse, steam to soften it, then diced.

* Cut yam into approximately 1 cm cubes

* Dried shrimps: rinse, briefly soak in water and minced (reserved the liquid)

  1. Prepare the flour batter by mixing well the rice flour, wheat starch, potato starch, salt and water. Set aside.
  2. Deep fry the shallots with one cup of cooking oil till crispy and light golden brown. Sieve the shallots and set aside.
  3. Shallow fry the yam cubes with the shallot oil for about a minute. Remove and set aside.
  4. With about 3 to 4 tbsp shallot oil in the wok, stir fry mushrooms, sausage, dried shrimps with minced garlic till aromatic. Add in the yam cubes, five spice powder and about 1/3 cup water that was used to soak the dried shrimps.
  5. Pour in the flour batter and continue to stir to prevent sticking at the bottom. The mixture will thicken to a paste form. Transfer to a well-greased pan, smooth out the surface with a greased spoon or spatula.
  6. Steam over high heat for about 50 to 60 mins. Garnish with chopped spring onion, fried shallots and cut chilli.  Cool completely before cutting.
