Stewed chicken wings with chestnut

Ingredients

Chicken mid wings
Carrots
Black fungus (soaked)
Button mushrooms
Chestnuts (ready-to-eat)
Ginger
Garlic

Seasonings
Light soya sauce
Oyster sauce
Fish sauce
Hua Tiao wine
Salt/Pepper/Sugar

Method

  1. Marinate chicken wings (you can use other chicken parts) with salt pepper and light soya sauce for at least 1-2 hrs
  2. Heat some oil in pan. Add sliced ginger and garlic. Stir fry till fragrant.
  3. Add chicken and fry till browned. Add carrots and fry awhile.
  4. Add water to cover chicken. Add button mushrooms and soaked black fungus. Bring to a boil.
  5. Add oyster sauce, fish sauce, hua diao wine and sugar to taste.
  6. Simmer till chicken is softened.
  7. Add chestnut and simmer for another 5 mins. Serve.
