Stir Fry Glutinous Rice 生炒糯米饭

Glutinous rice have so many ways to cook… I love to cook this way by stir frying! More fragrant!

Ingredients

3 cups of glutinous ricerinsed & soak for 3-4hrs)

1 Chinese sausage/Lap Cheong (soak  in hot water, removed skin & diced)

5 mushrooms (washed & soak till soften & slice. Keep the water)

3 tbsp dried shrimps (washed & soaked till soften. Keep the water)

3 tbsp dried scallop (washed & soaked till soften. Keep the water)

3 shallots chopped

3 cloves minced garlic

2 stalks Chinese parsley chopped

Peanuts ( stir fry till fragrant and put aside)

Fried crispy shallots ( put aside and use oil for frying later)

 

Seasoning

2 tbsp abalone sauce

1 tbsp oyster sauce

1 tbsp light soya sauce

1 tbsp sesame oil

 

Garnishing

Spring onion, parsley, fried shallots
& peanuts

Method

  1. Heat 3 tbsp shallots oil, add in minced garlic & minced shallots. Stir fry till fragrant, lightly brown.
  2. Add in mushrooms, Chinese sausage and dried shrimps/scallop. Stir fry till fragrant.
  3. Add in the glutinous rice and stir fry together with the ingredients. Add in seasoning and continue to stir fry.
  4. Slowly add the water from (soaked from dried shrimps/scallop & mushroom). Cover and cook over small fire for 3min, open cover and stir fry again to prevent sticking/burn. Add water again and cover and repeated again and again till rice is fully cooked.
  5. Add in the crispy shallots/spring onion/parsley and peanuts before serve.
