Sze Chuan Vegetable Soup 四川菜汤

My childhood’s favourite soup! Saltiness from the Sze Chuan vegetable, sourness from the preserved plum and tomatoes make this soup so appetising!

Ingredients

  1. 1pc of Sze chuan veg (Rinse once or twice and slice)
  2. 400g soft bone/pork ribs ( blanched)
  3. 3 cloves garlic ( removed skin and lightly pressed)
  4. 1 tomato (cut into wedges)
  5. 1 pc of salted sour plum (咸水梅)
  6. 1 box of tofu ( cut in cube)
  7. Around 1.5L water
  8. 1-2 tsp oil

Method

  1. Heat up oil in pot, stir fry garlic till fragrant before adding in water to boil.
  2. Add in the pork ribs and Sze chuan veg to boil for around 30 to 45min till meat is soft.
  3. Add in the salted sour plum, tomato and tofu.
  4. Boil for another 5 to 8mins and it’s done. Serve with rice.

 

Note: No salt is needed cos the salted sour plum and Sze Chuan vegetable were salty. For less salty, please rinse the Sze Chuan vegetable a few more times or remove the salted sour plum after 5 minutes of boiling.
