Teochew Steamed Fish

Ingredients

Ingredients

  • 1 medium whole fish ( I am using baby threadfin, you can substitute it with other fish that suitable for steaming)
  • 6 slices of ginger cut to thin strips.
  • 1 medium tomato, cut to small wedges
  • 3 shiitake mushrooms, drained, thinly slices
  • Salted vegetables, sliced thinly
  • 2 salted plums

Seasoning

  • 1 tsp sesame oil
  • 1 tsp chinese wine
  • 1 tsp light soy sauce
  • ½ tsp sugar
  • 2 tbsp water (adjust according to your preference, you may add more water.)

Method

  1. Clean, rinse and pat-dry baby threadfin thoroughly with paper towels. Season both sides lightly with salt.
  2. Place the baby threadfin on plate. Add shiitake mushrooms, tomato, salted vegetable, pickled plum and sliced gingers over the fish. (You may add tofu if you want)
  3. Mix all the seasoning in a small bowl and pour onto the fish.
  4. Steam on high heat for roughly 10 minutes. The water in the steamer should be boiling before the fish goes in.
