Tropical Bread Pudding

Bursting with tropical fruits and creamy coconut milk, it’s a hearty and yummy dish that’s sure to please even the pickiest eaters. Plus, it’s perfect for children’s parties!

Ingredients

Preparation Time: 10min

Cook Time: 30min

Ingredient:

  • 1 Tbsp unsalted butter
  • 100g mango, cubed
  • 100g pineapple, cubed
  • 100g orange juice
  • 100g coconut milk
  • 1 tsp vanilla extract
  • 1 egg
  • 120g bread, cubed
  • Enough icing sugar as sprinkle

Method

  1. Preheat oven to 180°c.
  2. Grease 3 ramekins with unsalted butter, set aside.
  3. In a large mixing bowl, whisk together the coconut milk, orange juice, vanilla essence and egg. Add in pineapple, mango and bread cubes. Fold all ingredients till well-coated with coconut mixture.
  4. Divide the bread mixture evenly among the ramekins.
  5. Bake the ramekins for 30min or until fully cooked. Insert a toothpick, it should comes out clean.
  6. Sprinkle with icing sugar. Serve warm & enjoy!
