Turnip Cake 萝卜糕

Ingredients

150gm rice flour
40gm wheat starch
250gm water  to mix with flour
300gm Radish juice + water
60gm shallots
25gm dried shrimp, rinsed
40gm oil, plus extra for greasing
5-6 dried Chinese mushrooms, soaked to soften, cube
100gm Chinese sausages, cube
400gm radish, grated, squeeze dry (keep the juice)

Seasoning
2 tsp chicken stock powder
2 tsp sugar

Method

Preparation

  1. Weigh in rice flour, wheat starch mix with 250gm water.
  2. Let it stand for 10 minutes.
  3. Grease steam dish with oil and set aside.

 

Method

  1. Add oil to wok, sauté slice shallot till aromatic.
  2. Add in Chinese sausage, brown it and force out the oil. Add in dried shrimp and mushrooms. Sauté till aromatic
  3. Add in radish and seasoning. Give it a good stir till well combined.
  4. Add in 300gm radish juice + water, let simmer for 8 minutes. Turn off the fire.
  5. Add in reserved flour mixture, stir till well combined.
  6. Transfer the batter into prepared oiled moulds and flatten the surface before steaming.
  7. Steam for 30 minutes. Allow to cool completely before refrigerating for 5 hours.
  8. Unmould and cut into 3 cm x 5 cm sticks, pan fry with frying pan until light golden brown.
