Warabimochi

Traditional warabimochi comes in either kinako or matcha flavour, often times served with kuromitsu. It is soft and tender, not as sweet as other wagashi, making it the favourite of many people, me included!

Ingredients

  • 80g warabiko
  • 300g water (adjust this for preferred consistency, this is on softer side)
  • 50g sugar (adjust to preference)
  • Kinako and kuromitsu to serve

Method

  1. Mix everything till combined.
  2. Cook over stove and stir vigorously when it comes together as a lump.
  3. Continue cooking over low heat till dough turns a little translucent.
  4. Store in container and chill for 30mins.
  5. Over turn onto a tray of kinako powder. Then dust more kinako powder on top.
  6. Cut into squares and cover each side with kinako. Serve with kuromitsu.
